2. Add the oil, salt and about half of the flour. Using the dough hook, mix on low for 1-2 minutes, or until all the flour is mixed in. Continue to mix on low and add flour until the dough pulls away from the sides of the bowl.
3. Once the dough pulls away from the sides, mix on low for about 2 minutes. If the dough feels sticky, add a little more flour, until the dough is no longer sticky but is still soft.
4. Turn the mixer off, cover the bowl with a towel, and let the dough rest for about 15 minutes.

4. Preheat oven to 375 degrees. Use a sharp knife to cut diagonal slashes on the top of each bread loaf, about 1/4 inch deep. Brush loaves with beaten egg.
