1. Bring the almond milk and the cream to a simmer in a heavy medium saucepan. Remove from heat. Whisk egg yolks in a large heat proof bowl. Add the sweetener and whisk until blended.
2. Gradually whisk the hot cream mixture into the egg yolks. Be sure to add it slowly and whisk vigorously to keep the egg yolks from cooking. Return the mixture to the saucepan. Cook mixture over low heat, stirring frequently, until it reaches a temperature of 165- 170º Fahrenheit. Whisk in the glycerin and vanilla extract.
3. Cool mixture completely, stirring occasionally. I like to place the pan in a large mixing bowl of ice to cool the mixture quickly. Alternatively, you can allow it to cool at room temperature for 20 minutes, then refrigerate until chilled.
4. Pour cold mixture into an ice-cream freezer and freeze according to manufacturer's instructions. When ice-cream reaches the desired consistency, transfer to a freezer-safe container with a lid.

Rating: 4.3/5(143)
1. Melt the butter in a large saucepan over medium heat. Add half of the heavy cream (2 cups (473 mL)) and powdered sweetener. Bring to a boil, then reduce to a simmer. Simmer for 30-45 minutes, stirring occasionally, until the mixture is thick, coats the back of a spoon and volume is reduced by half. It will also pull away from the pan as you tilt it. (This will go faster if you use a larger pan.)
2. Transfer the mixture to your ice cream maker and churn according to manufacturer's instructions, or until the ice cream is the consistency of soft serve. (My ice cream maker took 15 minutes, so less than the average manufacturer time.) Do not over-churn, or it will turn into a butter-like consistency.
3. Transfer the mixture to a freezer container (like a 9x5 in (23x13 cm) loaf pan) and smooth the top with a spatula. (If you want to add mix-ins, gently stir them in at this step, and also sprinkle some on top.) Line the surface with a piece of parchment or wax paper to keep ice crystals from forming. (You can use an ice cream maker if you have one.)

2. Slice open the vanilla bean and scrape the seeds with a sharp knife.
3. Add coconut milk, sweetener, vanilla bean with scraped seeds (if using), and salt to a saucepan over medium heat. Whisk until all the solids from the coconut milk have the dissolved and the mixture is smooth. If using a vanilla bean, simmer for 15 minutes to infuse the milk.
4. Remove the vanilla bean and sprinkle xanthan gum little by little and blend until fully combined. If paleo and using arrowroot, dissolve it first in a tablespoon of cold water (i.e. make a slurry). You will likely have some air bubbles, but be sure to check there are no lumps. Any lumps will be resolved by mixing with an immersion blender (or in an actual blender). Sieve the mixture to a bowl, cover with a layer of cling film (saran wrap) laid directly over the vanilla mixture, and allow the mixture to cool completely. The texture will be thick and jelly-like (don't worry, your ice cream won't have this texture!).

1. NOTE: If using any flavor variation, see notes below* for when to add in the ingredients.
2. Bring heavy cream (1 3/4 cups) to a simmer in a heavy-bottom saucepan. Continue to cook at a simmer for 30 minutes, and watch carefully to maintain a simmer, not a boil -- you'll know you've reached the right temp when small bubbles continue to form around the edges. Whisk occasionally to fully incorporate bubbles with the cream.
3. Remove cream from heat, and whisk in erythritol (1 1/4 cups), unsalted butter (2 tablespoons), vanilla extract (1 teaspoon), and lastly xanthan gum (1/2 teaspoon). You want to sprinkle the xanthan gum over the top a little at a time so it dissolves without clumping.
4. Transfer the cream to a large bowl and allow it to come to room temp by placing it in the fridge for an hour.

1. Bring the coconut cream, xylitol, salt and vanilla extract to just below boiling point on the stove top. Add scraped vanilla bean at the same time if using. Hand whisk the mixture to ensure the sweetener has dissolved. Allow the mixture to cool completely in the fridge.
2. Once coconut cream mixture has cooled, using electric beaters, beat the mixture with the MCT oil and salt until smooth and creamy.
3. Whip the cream in a large mixing bowl until it thickens and forms peaks. Add the coconut cream mixture to the whipped cream and beat the mixture until it is well combined.
4. Finally, sprinkle or sift your precisely measured guar gum over the ice cream mixture and beat it in quickly until it is well combined with electric beaters. Take particular care here not to over mix but ensure that the guar gum( or xanthan gum) is well mixed in. Note- sprinkle the guar gum away from the edges of the bowl as it can clump there. Scrape the sides of your bowl down while beating to ensure all of the gum is mixed in.
