1. Combine butter, granulated sugar, and powdered sugar in a mixer and beat well until light and fluffy.
2. Add in the eggs, vanilla, and any flavoring (if desired), scraping the bottom and sides of the bowl.
3. Mix in the flour, baking powder, and salt until combined. Divide the dough into three even sized balls.
4. Return 1/3 of the dough to the mixing bowl and add a 5-10 drops of red gel food coloring, mixing well until the dough is evenly colored. Repeat with another 1/3 of the dough and the green food coloring.

2. In a large mixing bowl, beat together the butter and sugar for 1-2 minutes, or until pale and fluffy. Add the egg and vanilla to the butter mixture and beat until combined, scraping the sides of the bowl as needed.
3. Add the dry ingredients to the wet ingredients in two additions, mixing until just combined after each addition. Scrape the sides od the bowl as needed.
4. Divide the dough into 3 equal pieces and roll each piece into a ball. (You can eyeball it or use a kitchen scale to measure the pieces.)
