Low Carb Keto Mojito (3g Net Carbs!) This keto mojito is one of those classic low carb cocktails that just screams summer with every crisp and delicious sip! The low carb alcohol in this drink is rum, which is complemented by muddled mint, lime juice, and soda water.
Add fresh mint (6 leaves) to a cocktail shaker and lightly muddle, making sure not to over-muddle as this will give your cocktail a grassy taste. Add erythritol (2 teaspoons), white rum (1 1/2 Ounces), lime juice (2 tablespoons), and crushed ice (1 cup). Cover and shake. Strain mojito over ice in a highball glass.
Although a highball glass (the tall glass in the photo below) is classic, it is not necessary for this low-carb mojito recipe. The point of a highball glass is to serve "tall" cocktails that contain a large proportion of a non-alcoholic mixer as compared to the alcohol. Often it is used interchangeably with the Collins glass.
Add erythritol (2 teaspoons), white rum (1 1/2 Ounces), lime juice (2 tablespoons), and crushed ice (1 cup). Cover and shake. Strain mojito over ice in a highball glass. Top with club soda, garnish with mint leaves, and enjoy!
