4. Use a spatula to fold the whipped egg white into the chocolate batter, being careful not to destroy any air bubbles.

4. Add the remaining 3 tablespoons of sugar, cream of tartar and salt to the medium bowl with the egg whites and whip to medium-stiff peaks with an electric hand mixer.
