Since this cake is gluten free and low carb, we are not using any flour, but hazelnut meal. No gluten and leavening agent meant that we rely on the eggs to lift the cake and make it fluffy.
It's dairy-free, sugar-free and won't spike your blood sugar. Making keto chocolate hazelnut spread is easy! I personally prefer the taste to be less "hazelnutty", and for that reason I additionally used almonds and macadamias.
A few notes: I used a combination of almond and hazelnut flours. Don’t be tempted to increase the hazelnut flour though. While the right amount will give it a Nutella-like flavour, too much hazelnut flour would increase the carbs and even give your cake a bitter taste.
