1. In a small saucepan heat 1 1/2 cups of water with a 1/2 cup of sugar substitute. You need to heat this just enough for the sugar substitute to dissolve in the water. Be sure to taste it and add more sugar substitute if it's not sweet enough for your taste buds.
2. Put a 1/2 cup water in a microwave-safe container and bring it to a boil using the microwave. (or you can use the stove top for this part too)
3. Pour 5 tbs of Great Lakes Unflavored Gelatin into the hot water and mix it quickly. I found it easy to use my Nutri Ninja blender for this part because it starts to thicken pretty fast.
4. Then pour the 1/2 cup of gelatin mix into the sugar substitute water.

1. Make a bain-marie/double-boiler by fitting a glass, ceramic, or metal bowl over a 6-inch saucepan and adding some water (2inches/5cm). Do not let the bottom of the bowl touch the water and make sure that the fit is loose enough that the steam can escape.
2. Place the saucepan onto a stovetop and bring the water to simmer.
3. Add the gelatin, granulated sweetener, and heavy cream to the bowl, stir well, and place it over the saucepan. Wait for the gelatin and sweetener to completely dissolve (about 5 minutes) in the heavy cream, but don’t let the mixture simmer.
4. When done - using a kitchen towel (the bowl will be very hot) - remove the bowl from the saucepan and set aside to cool a little bit.
