1. Season chicken pieces with salt and pepper. Coat chicken pieces with 3 Tbsp of cornstarch.
2. Spray a large skillet or wok with non stick cooking spray. ( Since you will only be using 1 and 1/4 Tbsp-I like to still spray the pan or wok with non stick cooking spray-so the chicken doesn't stick.)
3. Heat oil over medium high heat and place chicken pieces in heated wok. Note: Be careful the oil is hot and can splash up and burn you.
4. Cook chicken until it is no longer pink, and is lightly brown on both sides.

1. In a medium bowl, combine the soy sauce, honey, sriracha, ginger, garlic, sesame seeds and sesame oil. Set aside.
2. In a large bowl combine the chicken, cornstarch, and a pinch of salt and pepper. Heat a large pan over high heat for at least 2 minutes. Add oil and chicken to pan. Stir-fry chicken for 5-6 minutes or until it's golden brown. Add the sauce and allow the sauce to simmer for 3-4 minutes or until the sauce is thick and sticky.
3. Remove chicken from pan, sprinkle with chopped spring onions and more sesame seeds if desired. Serve with hot white rice or noodles.
