3. Transfer breasts to electric smoker. Close door and smoke until internal temperature has reached 160°F (71°C), approximately 1 hour.
4. Remove chicken breasts from smoker and place on chopping board. Tent in aluminum foil and leave to rest for 5-10 minutes, or until internal temperature has risen to 165°F (74°C).
