1. Prepare the chicken by cutting in half like you would a bagel. If you chicken breasts are thin already, this step is not needed. Sprinkle with salt and pepper.
2. Add the oil to a large saute pan and heat to medium high. Brown the chicken breasts for about 3-5 minutes per side.

4. Let simmer for 5 minutes, then add in the chicken, cover and cook for 10 minutes or until the chicken is cooked.

4. Lower the heat to a simmer and add the chicken breasts into the pan. Nestle the cherry tomatoes on the vine among them. Sprinkle with the crushed chillies.
