3. In a skillet over medium high heat add the remaining olive oil and the steak. Cook 3-4 minutes per side for medium rare to medium doneness. During the last minute of cooking spoon 1 Tbsp of the blue cheese butter on top of the the steak and let it melt into the steak.
4. Remove the steak from the pan and let it rest 5 to 10 minutes.
