1. Add cauliflower florets to a food processor and pulse until it looks like chunky rice. You don't want it too fine or it will get lost in the salad.
2. Mix together the salad dressing: whisk olive oil, vinegar, garlic, salt, pepper, Italian seasonings and dry mustard. Set aside.
3. Chop meats and vegetables as finely as you can so that they are not much bigger than the cauliflower.
4. Grate the cheese and then toss everything together including the dressing.
