The sugar sticks to the cookie because of the wash and makes the finished product more enticing than the average candy cane cookie. Place the butter, sugar, peppermint, vanilla, baking powder, and salt in the bowl of stand mixer. Beat until a paste forms and clings to the side of the bowl.
A lot of recipes tell you to sprinkle crushed candy canes (real ones!) over the cookies right out of the oven. You can certainly do that, but I prefer to brush the cookies with an egg white wash and sprinkle them with sparkling sugar instead.
For each candy cane, shape 1 rounded teaspoon dough from each half into 4-inch rope by rolling back and forth on floured surface. Place 1 red and white rope side by side; press together lightly and twist. Place on ungreased cookie sheet; curve top of cookie down to form handle of cane.
Roll 1 teaspoon of the red dough and 1 teaspoon of the white dough on lightly floured board into 4 inch strips. Place strips side by side and press lightly together and twist like a rope. Curve top of rope down to look like the handle of a candy cane. Bake 9 minutes or until lightly browned. Remove while still warm.
