1. Preheat oven to 400 degrees F. Season the redfish fillets with the salt, pepper, and cayenne pepper. Set aside.
2. Make the Creole butter sauce by mixing the melted butter, apple cider vinegar, minced garlic, parsley, Tabasco garlic pepper sauce, Creole mustard, and liquid smoke together in a small bowl, and set aside.
3. Cut two large sheets of parchment paper, and fold each of the sheets in half. Starting from the top crease, cut each parchment paper sheet into a half-circle or half-heart shape.
4. Lay each sheet onto a lightly greased sheet pan.

2. Remove the fish from the pan and add the chopped shallots and 1 tbsp of butter. Cook the shallots for a few minutes until soft and golden. Do not brown! Add the red pepper and cook another minute longer.
3. Add the cream to the pan and bring to a slow simmer. Add 1 tbsp of Cajun seasoning to the cream sauce, stirring up any bits from the pan. Season with salt and pepper.
4. Add the baby shrimp to the pan and bring back to a simmer. Serve spooned over the fish fillets and enjoy!
