For lower a lower carb Hush Puppy, you can use Almond Flour or Flaxseed Meal. Baking Soda- ½ teaspoon. Salt and seasonings to taste. Onion- 1 small chopped. Eggs- 2 lightly beaten. Buttermilk or similar dairy- ½ cup. .
In a mixing bowl, whisk together almond flour, coconut flour, baking soda, garlic powder, onion powder, salt, pepper, and keto sweetener. Add in egg and heavy cream to the flour mix. Do not overmix the batter, you want a cornbread texture. Place hush puppy batter in the fridge for 30 minutes.
When you are able to form a hush puppy, place it into your basket, being careful that your hush puppies are not touching one another.
