Weigh out your grains in a 2 to 1 ratio. For the 10 gallon batch, this will be 6 lbs of corn and 3 lbs of sweet feed. Set aside until the water reaches 160f. Now you can add the grains and reduce heat to maintain 160f for 45 minutes. Continuously stir the mash to avoid letting the grains scorch on the bottom of the pot.
2 packages of yeast. Heat 18 gallons of water to 172 degrees and pour into the barrel. Add the corn meal to the water and mix until fine–no lumps. Add the rye meal and mix until fine. Let mixture sit for 1.5 hours. Transfer a few gallons of the mixture into a separate bucket and stir in 11 lbs. of malt.
It's slightly short of 50 gals because you have to leave enough room in the top so the 50lbs of sugar won't over fill it. But, if you are making "less" than 50 gals of mash, you can just use the full volume of water cause you will have room. The impact of this on the recipe is negligible.
I use an outdoor propane burner. While waiting for the water to come to temperature put one part sweet feed to 2 parts corn in a 5 gallon bucket until its full. Weigh out your grains in a 2 to 1 ratio. For the 10 gallon batch, this will be 6 lbs of corn and 3 lbs of sweet feed. Set aside until the water reaches 160f.
