In a medium bowl, combine the flour, baking soda, cinnamon, and salt. In a large bowl, with an electric mixer at high speed, beat the sugar and egg whites until soft peaks form. With the mixer at low speed, blend in the apples, applesauce, and vanilla. Add the flour mixture, stir until just combined (do not overmix).
Stir together sour cream, oil and applesauce in a small bowl. Stir sour cream mixture into flour mixture just to mix. (Do not beat.) Spoon batter into prepared pan and bake until a toothpick inserted in center comes out clean, about 40 to 45 minutes.
