This low carb cheese straws recipe is quick and easy to make. You simply made the dough in a food processor, roll it out, cut into straws and bake. 15 minutes later you have a delicious savoury low carb snack. Almond flour – I used finely ground almond flour, but almond meal may work.
When ready to make the cheese straws, preheat the oven to 350 degrees F. Line 2 baking sheets with silicone baking mats or parchment paper. Mix the flour, salt, cayenne, mustard and black pepper in a medium bowl. Put the cheese and butter in the bowl of a stand mixer and beat with the paddle attachment until fairly smooth.
For the cheese, cheddar is traditional. I love Kerrygold’s Dubliner which is a cheddar-like cheese with a bit of nuttiness. I also like to throw a little freshly grated Parmesan in the mix. Gruyere would be delicious as well. If you can grate it, it’ll probably work here. Butter is an important part of cheese straws.
Gently place the strips onto a parchment paper lined baking tin. Remove from the oven and allow to cool before handling. Makes 20 to 25 (quantity will vary depending upon size and thickness of straws). The net carbs will be the total carb count minus the fibre count.
