For more information, read my disclosure policy. Caramel Chex Mix is a twist on the classic party snack with peanuts and M&Ms tossed with caramel-coated cereal. This caramel snack mix is so good that you might want to make a double batch!
Bring to a boil: salt, corn syrup, brown sugar and butter. Boil 1-1/2 minutes. Add 1/2 teaspoons soda. Pour over the chex cereal in brown paper bag. Microwave 3-1/2 to 4 minutes. Shake bag after each minute. Spread on cookie sheet to cool.
Of course, traditional Chex Mix is loaded with all kinds of carbs, so I decided to just get creative and swap out all the crunchy bits (cereal, pretzels, crackers, etc.) and dump the seasoning over walnuts. Y’all this is the best snack I’ve had in a while. Big, bold flavors and it’s low carb!
