Preheat the oven to 375 degrees F. Line cookie sheets with parchment paper or silpat mats. In a medium bowl, whisk together the flour, baking soda, cinnamon and salt; set aside. In a small bowl, dissolve the espresso powder in the Kahlua; set aside. In a large bowl, use an electric mixer to cream the butter and sugars together.
Add the vodka, homemade Low-Carb Kahlua and mix. Pour a splash of cream over the top and swirl to combine. Prepare all the ingredients for the low-carb kahlua. Start with the coffee. The better the coffee, the better the end result. I used fresh brewed espresso.
Make the chocolate chip keto cookie dough. Beat in eggs, vanilla, and blackstrap molasses, then almond flour, just a bit at a time, and finally xanthan gum. TIP: There is a right way to add the almond flour and xanthan gum. Add the almond flour gradually, 1/2 cup at a time.

I was checking the nutritional information on Kahlua the other day and realized it has a TON of sugar in it (in fact, it has more sugar than alcohol!!) So it was time to make a sugar free coffee liqueur.
