1. Combine the brown sugar and balsamic vinegar in a small saucepan. Stir over medium heat for 4-6 minutes, or until thick and syrupy. Remove from heat to cool.
2. Cut the lettuce into quarters lengthwise. Remove the core and a small amount of lettuce from each wedge, so you have a slight well.
3. Pour 3 tablespoons of low-fat blue cheese dressing over each wedge. Top each with a 1/4 cup of tomatoes. Sprinkle 2 teaspoons bacon bits and some green onion on each.
4. Slowly drizzle 2 teaspoons of the balsamic glaze back and forth across the salad.

1. To a food processor add greek yogurt, blue cheese, milk, lemon juice, garlic clove, worcestershire sauce, onion powder, salt, and pepper. Blend until smooth. If you want it chunky, don’t blend as long. Set aside.
2. To a medium skillet add diced bacon pieces. Saute for until bacon is browned. About 5-7 minutes. Pour bacon onto a paper towel lined plate to soak up some of the grease.
3. Top each iceberg wedge with cherry tomatoes, piquillo peppers, bacon, red onion, green onions, and finish with light blue cheese dressing.
