My Dad's Vanishing Oatmeal Raisin Cookies are straight from the Quaker Oatmeal package. He has a couple of his own tweaks, of course. These are the cookies that my Dad is famous for making down in Phoenix with all their snowbird friends. He takes them to every get-together they attend.
Of course, oatmeal adds a great taste to a cookie such as this one. However, oatmeal also helps to retain the moisture in this cookie while baking, resulting in a chewy and moist cookie. It just occurred to me that one of my favorite cookies is the peanut butter and oatmeal cookie.
