You can make incredibly easy, creamy, sugar-free vanilla ice cream at home without an ice cream machine! This no churn delicious keto vanilla ice cream will be soft and scoop-able right out of the freezer! Just 2 total carbs per serving!
The sweetener you use is VERY important, because most sugar substitutes have a higher freezing point than that of sugar, resulting in rock-hard ice cream. Plus, they don’t dissolve well. This is why I only use Besti Powdered Sweetener for all my low carb ice cream recipes.
For a soft serve enjoy it straight away. For a scoop-able ice cream, pour into a loaf pan, cover with cling film and freeze for 1- 2 hours, or until fully set. It is possible to use regular vanilla extract in this recipe, but it's the vanilla bean that takes the recipe to the next level.
