Read my disclosure policy. Migas is a popular Tex Mex breakfast dish made with chopped corn tortillas, cheese, tomatoes, jalapeños, and onions. I serve it plated with tortillas on the side, but they can also be wrapped in a tortilla, taco style.
The best thing about migas is that you probably already have these ingredients on hand! You’ll just need: Eggs: Which we will soft scramble. (I like to add a bit of milk to my eggs to make them extra creamy.) Onion, Jalapeño and Garlic: I like adding these in to give the eggs some extra flavor and texture.
Crush tortilla chips and add to eggs with chopped fresh cilantro and stir until just combined. Optional: Serve migas in toasted corn tortillas or flour tortillas with chopped cilantro, tomatoes, and sliced avocados.
Serve migas in corn tortillas that have been heat up in coconut oil over medium heat (optional) for 30 seconds per side. Top migas tacos with additional cilantro, chopped tomatoes, cheese, and avocado slices. Enjoy! How much salt you add depends TOTALLY on the type of tortilla chip you are using.
