Total Time: 1 hr 55 minsCategory: Main CourseCalories: 543 per serving1. Take the meat out of the refrigerator an hour before you’re ready to cook, if you can, to bring it to room temperature. Pat the meat dry with paper towels. Additionally, pound the meat with a meat tenderizer to soften the fibers of the meat. You don't want to pound it too hard, but a light pounding with the rough edge of a meat mallet will do the trick. Trim excess fat, remove any gristle, and set aside.
2. In a large pot, cook onion in oil until caramelized (about 5 minutes). Transfer onions to a bowl and set aside.
3. Next heat 3 more tablespoons of oil in your pot for a minute or two. Then season your meat with salt and place it in the pot to sear. After about 3 minutes, flip the meat over and sear the other side for another 3 minutes. This will add tremendous flavor to your pot of stew.
4. Transfer your meat to a cutting board and deglaze the pot with wine scraping up the brown bits. Simmer until the wine is reduced by half (about 5-7 minutes).

Servings: 6Total Time: 1 hr 15 minsCategory: Savory PiesCalories: 627 per serving1. Prepare the dough by combining the butter with flour in a food processor or stand mixer until the mixture is mealy (you can also use your hands). Add the egg and mix thoroughly. Add enough water to form a dough that can be rolled. Put in refrigerator while you make the filling.
2. Saute the onion and garlic in butter until soft, but not browned. Cool. Mix all filling ingredients with your hands as you would a meatloaf.
3. Divide the dough into two pieces. Roll one to about 1/8 inch for the bottom. Form filling into an oval loaf on dough and pull up dough to partially cover sides. Roll the other piece of dough to 1/8 thick. Use and egg wash to secure crusts and encase meat loaf in its entirety. Cut a hole in the top to allow steam to escape. Coat entire pastry with egg wash. Left over dough can be cut into decorations and attached to outside of pastry. (I used small Christmas Cookie Cutters to make reindeer, etc.).
4. Preheat oven to 450 degrees and cook pie about 20 minutes. Turn oven down to 350 degrees and cook 1 hour more or until center registers 150 degrees on a meat thermometer and pastry is browned. Allow to cool.
