2. Add the powdered sweetener and pulse to combine. Add the egg white, almond extract, and rose water, if using, and run the processor on high until the mixture becomes a paste and begins to form a ball.
3. If the mixture is too wet, add a little additional almond meal. If the dough is dryish, add a bit of water, 1 teaspoon at a time. It should resemble cookie dough or pastry in texture.

2. Put the cheese and one tablespoon of butter in a microwave-safe bowl. Microwave one minute. Stir. Microwave 30 seconds. Stir. At this point, all the cheese should be melted. Microwave 30 more seconds until uniform and gloopy (it should look like cheese fondue at this point). Mix in the egg, almond extract, 1 tbsp sweetener, and almond flour. You may need to knead it by hand to thoroughly incorporate the ingredients. Once it is a uniform color press it out into the baking pan.
3. You can use the same bowl to mix the almonds, softened butter, and 1/4 cup sweetener. Spread this out on top of the dough. Bake at 350 for 30-35 minutes until golden. Remove from the oven and sprinkle with the remaining 2 tbsp sweetener.
4. Cool for at least 10 min. Cut into squares and serve.
