With Sicilian-style pizza, the criteria to classify it as such is simpler: focaccia crust, topped like a pizza, baked on a sheet pan. And so I started my experiments by simply topping my favorite focaccia dough recipe with sauce and cheese and baking the ensemble at high heat on a standard sheet pan.
Keto pizza crust: 1 6 ounces shredded mozzarella cheese (roughly 1 1/2 cups). 2 3 ounces blanched almond flour (roughly 3/4 cup). 3 2 ounces cream cheese (4 tablespoons). 4 1 large egg. 5 1/4 teaspoon salt.
All you do is sprinkle a layer of cheese across the bottom of your baking dish, top it with the egg mixture you blended in your food processor, and bake the low carb “crust.” Once it’s cooked, take it out and build the rest of your pizza.
If you have smaller sheet pans, then divide the dough and make 2 pizzas or reserve the remaining dough in the freezer. Form the pizza dough to the sheet pan so that it is completely covered. Next, evenly spread on the garlic and olive mixture all over the pizza making sure to leave a 1” crust around the outside.
