A creamy egg fast lemon pudding custard with less than 1 gram total carb per serving. It’s perfect for those on a very low carb keto diet. In medium saucepan, melt together mascarpone cheese and butter. Whisk in egg yolks. Continue to cook on low heat, stirring occasionally until custard thickens. Remove from heat.
A sweet layer of cream cheese lays in between the shortbread and tangy lemon pudding. A layer of whipped topping sits on top of the lemon pudding layer, completing the dessert. While the traditional version of a lemon lush is delicious, it is definitely not low carb and loaded.
Once you can scrape your spatula across the pan and it leaves empty space (i.e. it is more thick than liquid), then remove from heat and add lemon extract. Mix well. Add to a small bowl and cover with saran wrap so that it touches the top of the pudding.
