1. Dice mangos to your desired size. You can do large, medium, or small dice here. It's all preference and what type of bite you're looking for. Mince both the onions and garlic.
2. Add oil to pan, turn to medium and bring to temp. Add your onions, garlic, red pepper flakes and black pepper. Sauté until onions and garlic are translucent. About 3-4 minutes. If you're oil-free, use water or veg stock with a good non-stick pan.
3. Add mangos to the mix and cook for an additional 3-4 minutes.
4. Add all of your liquids, turn the stove on high and bring to a boil. Once boiling, add brown sugar and reduce it to a simmer. Simmer for 20-30 minutes until all liquid is gone and you're left with a thick sauce or jam-like consistency.

1. Place a medium saucepan over a medium/low heat and add the spices. Toast them carefully until the seeds begin to burst (around 30 seconds)
2. Add the shallots, garlic and salt. Give the pan a quick stir then add the vinegar. Bring to a boil and then reduce heat to a simmer until almost all the moisture has evaporated - around 5 mins.
3. Add the mango and cook for a further 2 minutes until the mango begins to soften but still holds its shape. Finally add the sugar and cook for a further five minutes, stirring constantly.
4. If jarring, make sure you have a medium sterilised glass jar ready to go. While hot, add the chutney to the jar and screw on the lid. Allow to cool fully. If serving straight away, allow to cool and enjoy!
