Heat, stirring occasionally, for a few minutes until it reaches 180 degrees F (82 degrees C), or just before boiling. Small bubbles will form on the edges. Do not let it boil. Stir in the vanilla extract.
4. While whisking the eggs constantly, pour the cream into the eggs very slowly in a thin stream.

2. In a bowl or a large jug, add the eggs, erythritol, vanilla, and stevia if added sweetness is desired. Whisk until combined.
3. Add the heavy cream, and whisk well until the eggs are dissolved.
4. Pour the mixture into the four ramekins. Pour boiling water in the oven dish surrounding the ramekins, until it covers about an inch from the top of your ramekins.
5. Preheat your oven to 150C/300F. Grease an 8in deep pie dish and set aside.
6. Place the eggs and sweetener in a large bowl and whisk together for 5 minutes, until they have paled in color.
7. Add the vanilla and 1/2 cup of the cream. Whisk well.
8. Add the remaining cream and almond milk and whisk until the ingredients are well mixed.
