1. Bring a large pot of salted water to boil for cooking the pasta.
2. Add the butter to a frying pan over medium heat and, if using raw prawns, add them to the pan and cook until they just turn pink. Remove the prawns and set aside, leaving the butter in the pan.
3. Add the shallot and chilli to the pan with the butter and saute. Meanwhile, put the pasta on to cook.
4. When the shallot begins to soften (2-3 minutes) add the garlic and tomatoes to the pan with a pinch of salt and pepper. Stir together then pour over the wine.

2. Heat up the olive oil in a large pan on medium to high heat for 3O seconds. Add in the garlic and stir for 20 seconds or until fragrant then add in the prawns and stir until half cooked.
3. Add in the linguine, chilli and salt and continue stirring and cook for 2 to 3 minutes or until the prawns are fully cooked (NOTE 2) and the linguine is well heated through.
4. Let the pasta rest in the pan for a few minutes off the heat before stirring in the rocket and the parmesan cheese. Season with salt and pepper to suit your taste.
