My sausage roll recipe makes the sausage meat from scratch. I like to use a fatty pork mince, or a mix or pork and veal, and I add lots of flavour through a mix of herbs and seasoning. And as my kids love to eat sausage rolls, I always sneak in carrots, and sometimes spinach too. Use a good-quality fatty pork mince.
Using the baking paper, fold the dough over the rolled pork from one side and press around the pork mince. Repeat this on the other side and use your hands to shape the rolls nicely and press down slightly on the seam. Cut each roll length into 8-9 sausage rolls.
Divide the sausage rolls into 10, 2” sections, then use a knife to cut the rolls. Place the rolls on their side (dough down) on a parchment paper lined baking pan. Poke each of the rolls with a knife, then generously brush with the remaining beaten egg. Bake for 25 -30 minutes.
