Add the egg whites to a bowl, add a pinch of salt and mix until foamy. Slowly add the remaining birch sugar and mix until stiff peaks form. Add some of the egg white to the bowl and carefully fold in. Add some more and continue folding it in until all egg white is incorporated – try to keep as much volume as possible. Add half of the orange filets and the ounce of sliced almonds and fold in. Pour the batter into the prepared tin and add the remaining orange filets on top in a line in the center and sprinkle with the tablespoon of sliced almonds.
