This recipe is for those who want a Quick Sourdough Keto Bread that can be made with only a few minutes of active time. Flax seed meal is a great way to add fiber to the Keto Diet. Most people are not getting nearly enough when they first start Keto.
Sourdough bread is particularly low in carbs, with 1 slice containing about 7 grams of carbs! A standard loaf of sourdough has roughly 100 calories and 2-3 grams of net carbs per slice. Which is nothing compared to the standards 50-60 grams of carbs found in even the thinnest slices of white sandwich bread.
But once your body is well into ketosis, most people are able to eat up to 100 grams of carbohydrates a day and still stay in ketosis. This means sourdough bread can be eaten on a low carb diet with careful planning. Again, the number of calories will also be slightly lower due to the carbohydrates levels being slightly lower for sourdough breads.
Without a sourdough starter, you need two things: something to make the bread sour, and something to make the bread rise. For rise, this recipe uses egg whites, baking powder, and baking soda, which provide plenty of lift. For sourness, you hydrate the dough with a combination of buttermilk and either sauerkraut juice or apple cider vinegar.
