1. Preheat oven to 325 F and prepare a 9" bread pan with cooking spray.
2. Soften cream cheese (12 ounces) and unsalted melted butter (1/4 cup) (this can be done in the microwave using 30 second intervals).
3. Add cream cheese, butter, olive oil (1/4 cup), heavy cream (1/4 cup) and eggs (4) to a large bowl and blend using a stick blender until everything is well combined.
4. In a second bowl mix the whey protein powder (1 2/3 cup), baking soda (1/3 teaspoon), baking powder (2 1/2 teaspoon ), xanthan gum (1 teaspoon) and salt (1/2 teaspoon).
