1. Sift together the flour, baking soda and cream of tartar into a medium bowl. Set aside.
2. Using a standing mixer fitted with the paddle attachment or a hand mixer, cream the butter for about 2 minutes or until pale yellow. Scrape down the sides of the bowl. Add the ¾ cups sugar, 1 ½ teaspoons of cinnamon and the salt. Mix on medium speed until well incorporated and smooth. Stop the mixer and scrape down the sides of the bowl.
3. On low speed, add the vanilla and egg and mix until well incorporated. Do not over mix. Slowly, add the flour mixture. Mix until all the dry ingredients are well incorporated. Scrape down the sides of the bowl and mix for an additional 30 seconds.

1. Stir together the flour, sugar, baking powder, baking soda, salt and sugar in a medium-size bowl.
2. Pour in the melted butter, milk and vanilla. Stir everything together until you get a thick, sticky dough. Leave the dough to chill in the fridge for 10 minutes.
3. Meanwhile, make the cinnamon sugar coating. Combine the sugar and cinnamon in a small bowl and set to one side. Preheat the oven to 330F/165C 15 minutes before you're ready to bake and line a baking tray with parchment paper.
4. After 30 minutes of chilling, scoop out 1 tablespoon-size portions of the cookie dough and shape them into balls. (You should get 5 full-size balls and 1 ball just a little smaller.)

1. In a medium bowl, sift together flour, cream of tartar, baking soda, and salt. Set aside.
2. In a mixer bowl fitted with the paddle attachment, beat butter and sugar on medium speed for 2-3 minutes, until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in vanilla extract. Add flour mixture and beat on low speed just until combined. Do not over mix.
3. If the dough is soft at this point, chill in the fridge for 1-2 hours or until firm. This step results in thicker cookies that will spread less while baking.
4. Preheat oven to 375F/190C. Line 2 pans with parchment paper.
