3. STIR IN THE DRY INGREDIENTS: Add the almond flour, coconut flour, baking soda, ginger, cinnamon, cloves, allspice, salt and stir well until combined.
4. CHILL DOUGH: If the dough seems too soft (this could result if you used melted coconut oil), you can cover the bowl and chill in the freezer for at least 15 minutes. I do not usually have to chill mine.

2. Divide dough in half; wrap each half in plastic food wrap. Refrigerate 1-2 hours or until firm.
3. Heat oven to 375°F.
4. Working with one-half of dough at a time, shape dough into 1 1/2-inch balls. Roll balls in sugar. Place 2 inches apart onto ungreased cookie sheets. Flatten balls to 2 1/2-inch diameter with glass dipped in sugar. Bake 8-11 minutes or until set.
