Estimated Reading Time: 8 mins
1. Prepare the parchment paper: Cut or tear 39 (10-inch or a little larger) square pieces of parchment paper. Line 2 large plates each with a sheet of parchment and set the rest aside.
2. Prepare the batter: Sift the flour, sugar, and salt into the bowl of a food processor fitted with the blade attachment or blender. (You can also use an electric hand mixer, immersion blender, or whisk and a large bowl.) Add the cream and eggs. Process or blend until thoroughly combined into a batter that is smooth, lump-free, and a bit frothy and bubbly on top, 20 to 25 seconds (or mix with a handheld tool for about 1 minute). If there are any lumps, pour the batter through a fine-mesh strainer into another bowl and discard the lumps.
3. Add the butter: Add the butter and mix until fully incorporated.
4. Chill the batter: Cover with plastic wrap, or if using a food processor or blender, transfer the mixture into a bowl and then cover. Refrigerate for at least 1 hour and up to 24 hours.

1. Add all the ingredients into a blender and blend at high speed until creamy and smooth. You may have to stop the blender, scrape down the side of the jug as some flour may pulse on the sides, and repeat blending until smooth. Overall it shouldn't take more than 45 seconds to create a smooth keto crepe batter.
2. Pour the batter into a mixing bowl rest for 5 minutes.
3. Heat a non-stick 10-inch crepe pan - I used a Tefal French Crepe pan - under medium heat. Rub the pan's surface with a piece of absorbent paper covered with a teaspoon of coconut oil or grass-fed butter. Don't leave too much oil on the pan, or you will fry the crepes.
4. Pour 1/3 cup of batter into the pan, then tip and rotate the pan fast to spread the batter as thinly as possible and cover the entire pan. It takes a bit of time and practice. Watch my picture above in the post to see the angle I give to the pan to spread the batter evenly. If your batter is too thick and doesn't spread well, that is ok. Stir in 1 or 2 extra tablespoons of almond milk in the batter to thin it out.

1. Melt the butter and let it cool down for a few minutes. Adding hot melted butter causes the batter to curdle.
2. Add heavy cream, salt and vanilla extract in the bowl of a mixer. Using a whisk attachment, start beating on medium high until medium peaks form. Add in Nutella and continue beating until you reach stiff peaks.
3. Spread 1 teaspoon of filling on top of your plate or cake stand and place the first crepe on top. Spread 2-3 tablespoon of filling on top of the crepe using an offset spatula or a spoon. Place another crepe on top. Keep layering the crepes. Top with some more Nutella whipped cream and garnish with hazelnuts, raspberries and a dust of cocoa powder if desired.
