1. Preheat the oven to 325 degrees F (163 degrees C). Line an 8 1/2 x 4 1/2 in (22x11 cm) loaf pan with parchment paper, with extra hanging over the sides for easy removal later.
2. Combine the almond flour, coconut flour, baking powder, erythritol, xanthan gum, and sea salt in a large food processor. Pulse until combined.
3. Add the melted butter. Pulse, scraping down the sides as needed, until crumbly.
4. In a very large bowl, use a hand mixer to beat the egg whites and cream of tartar (if using), until stiff peaks form. Make sure the bowl is large enough because the whites will expand a lot.

1. Place the yeast and the sugar in a small bowl and add about 2 Tbsp of warm water. Give it a stir and set it aside to proof. When it is ready, you will see it become frothy and bubbly. This can take anywhere from 5 minutes to 15 minutes.
2. While the yeast is proofing, mix the dry ingredients in the bowl of your stand mixer. Add the flour, chopped rosemary, sun dried tomatoes, roasted garlic, and the 1½ tsp fine grind sea salt.
3. Place the bowl on the stand mixer with the dough hook and turn on low speed to mix the dry ingredients. Add in the yeast and the remaining water. Mix for about 30 seconds and scrape down sides.
4. Add in 2 Tablespoons of olive oil and mix on medium speed for about a minute. What you are looking for is the dough ball to come together and not look too dry. The amount of olive oil you need to add may vary, so add up to 2 additional Tablespoons (1 Tbsp at a time) until you get the desired consistency.
