3. One brand of chopped tomatoes that is a favorite of ours is Pomi tomatoes, made in Italy by Parmalat. This brand of tomatoes comes in a 26.5-ounce box, which keeps the tomatoes very fresh tasting and prevents them from picking up a canned flavor. Look for them in well-stocked supermarkets or in specialty stores carrying Italian foodstuffs

1. Preheat oven to 375°F. Mix together almond flour, parmesan, salt, garlic powder and baking soda. Beat egg thoroughly in a separate bowl.
2. Add mozzarella to a large microwave-safe bowl. Microwave the cheese on high in 30, 20 and 10 second intervals, stirring in between, for a total of 2-3 minutes (mixture should be very warm and fluid). I usually do 30 seconds, 30 seconds, 20 seconds, 10 seconds and a final 10 seconds (all microwaves are different so it’s best to keep a close eye on it).
3. Pour the egg into the cheese mixture and beat vigorously to completely incorporate.
4. Once incorporated, add the dry ingredients and mix with a sturdy spoon/spatula until the dough comes together. Knead the dough with your hands for 3 minutes—folding it into itself—until ingredients are completely combined.

Estimated Reading Time: 3 mins
1. In the bowl of an electric mixer fitted with a dough hook, combine your yeast and warm water and mix. Allow the yeast to bloom, which means making sure it activates. This should take no longer than 10 minutes. You will see bubbles form on the surface and the mixture becomes more opaque.
2. Add sugar and olive oil, then mix. Add in the flour and then the salt and turn the mixer on low and let it mix until a dough forms. Knead the dough for 2 minutes on medium low. Then turn off the mixer and let the dough rest for 5 minutes.
3. Now turn the mixer back on medium low and knead the dough for 2 minutes. The dough should not be sticking to the sides of the bowl and it should be one cohesive ball of dough. If it isn’t forming one dough ball, you may need to add a little more water. If it is sticking to the sides of the bowl you may need to add more flour. Just add a little of either until you reach the correct consistency.
4. Remove the dough from the bowl and divide into desired sizes. This recipe will make 3 medium size pizzas or 1 thicker large sheet size pan pizza, or you could do 2 large thin pizzas. It’s up to you. Coat each ball of dough in olive oil and place in a plastic bag or covered bowl. Allow the dough to rise for 1 hour. Then punch down the dough, re-shape into a ball. At this point you can do a couple different things:* You can place the dough in the refrigerator and cook later that night. You will need to take the dough out of the refrigerator 2 hours prior to cooking to allow it to rise.* You can allow it rise on the counter for 2 hours and then cook without refrigerating it.* You can freeze it. You would allow it to thaw in the refrigerator and then remove from the refrigerator 2 hours prior to cooking to allow it to rise.So depending on what your plan is, use one of the above steps to proceed.

1. Preheat oven with pizza stone already inside to 425 degrees.
2. In a large, microwave-safe mixing bowl, combine mozzarella and butter. Heat in the microwave for approximately 90 seconds. Remove and stir to combine. Add egg and stir again. Egg will not be entirely incorporated, but do your best.
3. Sprinkle almond flour, coconut flour, and salt evenly over the cheese mixture. Kneed dough by hand in the bowl until firm and all dry ingredients are incorporated and evenly distributed, just a few minutes. You'll feel the texture start to firm up. If the dough is too sticky, add a little extra almond flour. Form a ball of dough.
4. Lay down a large piece of parchment paper. Grease lightly with avocado oil. With your hands, flatten the dough ball into a circle. Place on parchment and put a second piece of parchment on top to cover. Roll out the dough until you form a 10-12 inch diameter circle; keeping it to about 1/8 to 1/4 inch thick. Remove top layer of parchment. Roll the outer edge inward just slightly to form a raised edge. This will help keep toppings from spilling over and off of the crust. Poke multiple times with a fork to prevent air bubbles.

1. Preheat the oven to 425 degrees F.
2. In a food processor, combine the first seven ingredients and pulse a few times to combine. In a liquid measuring cup, add a beaten egg plus the 1 Tbsp. of water. With the food processor on, slowly add in the egg. The dough should come together into a ball on its own.
3. Remove the dough from the food processor and shape into a round ball. Place the dough ball in the center of a piece of parchment paper and gently press down to flatten it slightly. Place a second piece of parchment paper over the dough ball to make it easier to roll out (prevents the dough from sticking).
4. This can be rolled out into a 12" circle. To roll a perfect circle I place my rolling pin at 3 o'clock. Roll a quarter turn towards what would be 6 o'clock. Next, rotate the parchment paper/dough a quarter turn counter clockwise (12 o'clock to 9 o'clock). Then roll again from 3 o'clock to 6 o'clock and repeat with a counter clockwise turn. This helps keep the pressure to evenly spread throughout the dough and creates a nice even circle.
