Place on parchment and put a second piece of parchment on top to cover. Roll out the dough until you form a 10-12 inch diameter circle; keeping it to about 1/8 to 1/4 inch thick. Remove top layer of parchment. Roll the outer edge inward just slightly to form a raised edge. This will help keep toppings from spilling over and off of the crust. 2. Add sugar and olive oil, then mix. Add in the flour and then the salt and turn the mixer on low and let it mix until a dough forms. Knead the dough for 2 minutes on medium low. Then turn off the mixer and let the dough rest for 5 minutes.
3. Now turn the mixer back on medium low and knead the dough for 2 minutes. The dough should not be sticking to the sides of the bowl and it should be one cohesive ball of dough. If it isn’t forming one dough ball, you may need to add a little more water. If it is sticking to the sides of the bowl you may need to add more flour. Just add a little of either until you reach the correct consistency.
4. Remove the dough from the bowl and divide into desired sizes. This recipe will make 3 medium size pizzas or 1 thicker large sheet size pan pizza, or you could do 2 large thin pizzas. It’s up to you. Coat each ball of dough in olive oil and place in a plastic bag or covered bowl. Allow the dough to rise for 1 hour. Then punch down the dough, re-shape into a ball. At this point you can do a couple different things:* You can place the dough in the refrigerator and cook later that night. You will need to take the dough out of the refrigerator 2 hours prior to cooking to allow it to rise.* You can allow it rise on the counter for 2 hours and then cook without refrigerating it.* You can freeze it. You would allow it to thaw in the refrigerator and then remove from the refrigerator 2 hours prior to cooking to allow it to rise.So depending on what your plan is, use one of the above steps to proceed.
