DirectionsStep1Mix all ingredients together in a small bowl until well combined. Set aside.Step2Slice the halloumi and mushrooms into flat strips and add to a large bowl.Step3Add the peri peri sauce to the bowl and mix well with your hands so all of the halloumi and mushrooms and coated in the sauce.Step4Add a little olive oil to 2 frying pans and set both to a medium heat.Step5Place the mushrooms into one pan and the halloumi in the other. It's best to keep them separate as the mushrooms can release quite a lot of liquid as they cook.Step6The halloumi will need about 2-3 minutes of frying on each side, until nice and golden brown. The mushrooms should cook in about the same amount of time. Make sure to give them a stir every now and then.Step7Warm up the tortilla wraps by popping them in the microwave for 30-45 seconds.Step8Lay out each tortilla wrap flat and spread on a layer of yoghurt mayo.Step9Add your filling to the bottom half of each wrap. Start with a few lettuce leaves, followed by the fried mushrooms and halloumi.
