1. Clean potatoes (leave peel on) and place in large stock pot. Cover with water, season liberally with salt, and bring to a boil. Reduce heat and simmer until fork tender, approximately 45 minutes. Remove potatoes from pan.
2. Cook eggs according to stove top or instant method. See blog post for details and directions.
3. Peel potatoes (while they are still warm) and slice in small bite-sized slices into a large mixing bowl.
4. When eggs are cool, separate yolks from whites. Slice the whites into the mixing bowl with the potatoes. Season with salt and pepper according to your taste.

1. Peel the potatoes and chop into 1/2" squares. Place in a large pan with at least 2" of water and boil for 10-12 minutes. Check at 10 minutes - the potatoes should still be a little firm, but a fork will slide into them fairly easily.
2. Remove from the stove and drain the water out of the pan completely. Pour the cooked potatoes in a large sealable container and gently push them to the edges as much as possible to cool without cooking further.
3. In a medium bowl, combine the eggs, Miracle Whip, mayonnaise, mustard, pickles, pickle juice and white part of the onions. Dip a heaping 1/4 cup of the mayonnaise/mustard mixture and add to the cooled potatoes. Mix gently with a wooden spoon.
4. Add the rest of the mayonnaise/mustard mixture (or to the texture you like) along with a couple of pinches of salt and pepper and gently stir until potatoes are coated. Put a lid on the container and refrigerate at least one hour before serving (the colder, the better).

1. Peel and cut the potatoes into chunks. I like my potato a little smaller than chunks. You can choose to leave the skin on the potato. Boil the potatoes until they are fork tender. Mine took anywhere from 8 to 12 minutes. Using whole potatoes they will take a lot longer than 12 minutes more like 20 to 30 minutes. I set a timer for 8 and they weren’t quite done yet so I let them go for 2 minutes longer.
2. While the potatoes are boiling, this is when you want to make your hard boiled eggs and chop your celery and onions. To make my hard boiled eggs see my method for cooking hard boiled eggs in the Air Fryer. There plenty of other methods for cooking hard boiled eggs, this is how I prefer cooking them.
3. In a large bowl combine the miracle whip, mustard, vinegar, salt, and pepper. Whisk to combine. Add in all the prepared vegetables and hard boiled eggs. Stir to combine and set in the fridge. Can be served warm or cold.
