Jump to Recipe. Murukku recipe – Murukulu or murukku is a deep fried Snack made with rice flour and dal flour. Chakli, chakuli, chakralu and jantikalu are the other Indian names to these. There are so many varieties of murukku, the one I am sharing here is a basic, very old and standard recipe that is followed by many South Indian women.
Traditionally short grain raw rice is rinsed and soaked well for 1 to 2 hours. Then drained and shade dried for a while. It is then milled to fine flour. This process makes the murukku lighter as well. So If using store bought rice flour you may get different results unless you ensure you use raw rice flour.
Heat on medium. Stir in two cups of leftover rice and season with salt, pepper, and a squeeze of lemon or lime. If you want a bit of kick, stir in cayenne pepper or crushed red pepper flakes. If it needs a little more liquid, add a bit of water or orange juice. Heat just until rice is warm. (Tip: This is a perfect side dish for ham.)
Bring water to a boil. Rinse rice well in cold water and drain. Add rice and coconut oil, reduce heat to low, cover, and cook for 20 minutes. Remove rice from heat and immediately transfer it to the fridge. Let rice cool in the fridge for 1 hour, or longer. You can portion out the rice before putting it in the fridge so that it cools more quickly.
