1. Peel the plantains and cut on the diagonal in 1-inch slices.
2. Soak plantain slices in the water and 1 Tbsp. salt for 15 minutes. Drain well.
3. Heat olive oil in a large frying pan or caldero/Dutch oven. Add all the plantain slices and fry on low heat for 10 to 15 minutes, until lightly golden. Scoop them out and lay on a paper towel to absorb the extra oil.
4. In a mortar, crush the garlic cloves and mix in 1 Tbsp. olive oil and 1 tsp. salt. Remove from mortar.
