1. In a large bowl, beat the eggs with sugar until pale, yellow and foamy.
2. In a small saucepan, heat 1 cup of milk slowly until it reaches a simmer. Very gradually beat in the milk with the egg mixture in the bowl. Pour this into the pan and return to heat.
3. Heat slowly, while stirring, until the mixture slightly thickens (coats the back of a spoon). Be careful... don't heat too quickly or you'll end up with scrambled eggs!
4. Strain the egg custard mixture through a fine mesh sieve into a large bowl. Whisk in the condensed milk, remaining 1/2 cup milk, and peppermint extract.

1. Combine cream and almond milk in a medium microwave safe bowl. Microwave for 2 minutes.
2. Combine all other ingredients in another bowl. Add to heated cream and stir until combined. Microwave for one minute. Stir. Microwave for 30 seconds, stir. Microwave for another 30 seconds, stir. (Don’t try to do this all in one step or you’ll end up with sweet green scrambled eggs. Trust me on this.) Alternatively you could heat it in a saucepan until thickened but be very very careful not to overcook it.
3. Strain into a chilled bowl to get any lumps out and chill overnight in the fridge or in the freezer for 15-20 minutes until cold.
4. Add to ice cream maker, following manufacturer instructions, and then eat soft or freeze until firmer.

1. Freeze your ice cream maker bowl for 24+ hours (I used my KitchenAid ice cream maker attachment).
2. In a blender, add the cottage cheese, a splash of half and half, and the mint leaves. Blend until completely smooth. Add the remaining half and half, stevia extract, vanilla extract, mint flavor, and chlorophyll/natural food coloring. Blend until smooth.
3. Place the frozen ice cream maker attachment onto the stand mixer and turn on the "stir" speed. Pour ice cream mixture into the ice cream bowl and churn until soft-serve consistency.
4. Transfer the ice cream into a freezer-safe dish. Cover and freeze until it's the texture you prefer (~3-5 hours). Serve with extra chocolate chips and a fresh sprig of mint!
