Traditional coffee jelly recipes typically contain white sugar. To keep things Paleo, this recipe uses maple syrup as the sweetener and grass-fed gelatin for the texture. Coffee adds a bittersweet edge that offsets the creamy almond milk while black tea adds a light herbal touch. To get started, mix the gelatin powder with cold water.

1. Place a large bowl of oil in the freezer for 20 minutes.
2. Steep 3 bags of black tea in 1 cup of hot water for 5 minutes. Mix in 2 tbsp of brown swerve. Combine tea and gelatin in a medium pot over medium high heat. Bring to a boil. Once boiling, remove from heat and let cool for 5 minutes. It should be slightly thickened.
3. Remove oil from freezer. Using a large syringe or a dropper, soak up the gelatin tea and drop into the cold oil making little pearls. You don't have to be crazy precise with this because once the tea hits the oi, it will form into a ball itself. Stir pearls occasionally to assure they're not sticking together. Once you have your desired amount of boba pearls, drain the oil over a large bowl using a strainer. Save the oil for another time. Rinse the pearls in cold water until all the oil has been washed off.
4. Steep one tea bag in each cup of hot water for about 5 minutes. Mix in 1 tbsp of brown swerve into each cup of tea. You can add more or less depending on how you like it. Pour 1 tbsp of heavy cream into each cup and stir. At this point I like to cool my tea down to room temperature by dropping in a large ice cube. This will prevent all the ice from melting when you make your bubble tea.

Frequently Asked Questions

Can you make coffee jelly with milk tea?

(Though if you want to, by all means, do!) The milk tea part of this recipe is very simple: strongly brewed black tea, a little milk or cream, a little sugar. You brew the tea hot and then let it chill while you make your coffee jelly. And the coffee jelly is literally just coffee, water, a packet of gelatin, and sugar.

How do you make tea with brown sugar and milk?

Boil the water. Pour the boiling water over the tea or tea bags, and steep for 5 minutes. Let it cool for about 10 minutes. Add brown sugar. Remove the tea bags/tea leaves and stir in the brown sugar. You can use dark brown sugar or light brown sugar. Add milk and heavy cream. If using dairy, prefer using whole milk for this recipe.

How do you make a jello and tea drink?

Once jelly is firm and tea cold, stir together tea, sugar, and cream. Add more sugar and cream to taste. Cut jello into 1/2-inch cubes (slightly smaller if serving with a straw), and add to your glass until the glass is about 1/3 of the way full. Pour in milk tea.

How to make iced milk tea?

Instructions: Bring water to a boil and pour over tea leaves. Steep the tea leaves in the hot water for 4-6 minutes. The longer the tea steeps, the stronger the tea flavor will become. Strain out tea leaves. Stir in milk and honey/simple sugar. Recipe Notes: You can also make basic milk tea as an iced tea if preferred.
