Polvorones are also known as Mexican wedding cookies and are a tender shortbread cookie made with chopped nuts and topped with powdered sugar. These crumbly, buttery shortbread cookies known as polvorones or Mexican wedding cookies melt in your mouth.
These low-carb Mexican wedding cookies need the dough to be chilled a minimum of 30 minutes prior to baking. This helps the cookie retain its’s round classic shape. You’ll be baking these in a preheated 350-degree oven and using baking sheets that are lined with parchment paper.
With the same dough, you can make many different cookies or Polvorones Mexicanos. The only thing you will change is the shape, flavor or toppings depending on what cookie you want to make with it. First, adjust the oven rack to the middle position and turn the oven on to 325 degrees. Grease 2 baking sheets or line with parchment paper.
Some Mexican bakeries sell the pink or yellow colored cookies. If you want to have that same effect, add a few drops of food coloring to the wet ingredients before adding the flour. You can also set aside a portion of the dough and add the food coloring and knead to mix in the color.
