1. Preheat oven to 275°F. Line a roasting pan or a baking sheet with aluminum foil, and set aside. (This may require more than one pan if you're making a lot of ribs.)
2. Rinse ribs and pat dry with paper towels, and remove any silver skin from the backs. (You should be able to remove this with your fingers.)
3. If you want, trim the ribs into 4-5 rib sections.
4. Season the ribs liberally with Memphis-style barbecue rub. You'll use about 1 tablespoon per pound.

3. Make sure you have removed the silver membrane from the back (rib side) of the Baby Back Ribs. You can do this by inserting a table knife under the membrane at one end of the ribs to lift and loosen the membrane
4. Then, using a paper towel to grip the membrane, slowly peel it back off the ribs. Sometimes it will come off in one long piece, and sometimes it will break apart, so you'll need to do it in pieces.If you're still not sure how to do this, there are lots of videos on google that will show you how.
