Then transfer in Seviyan (vermicelli) and fry for 2 mins and off the fire. Once the milk is boiled, mix the Seviyan into the milk and cook until soft about 5-7 mins.

Meethi Seviyan/ Sweet Vermicelli is a delicious Indian dessert made with seviyan (whole wheat vermicelli), ghee, milk, dry fruits and sugar. In this recipe i have replaced refined sugar with jaggery powder. Meethi Seviyan is usually served on special occasions and during festivals like Eid.
If using roasted seviyan, then just fry for few seconds. In another pot, add sugar and pour water or milk. Bring it to a boil and dissolve the sugar completely. When the sugar syrup comes to a rolling boil, then pour it to the roasted vermicelli. Stir gently and allow to cook until the water/ milk has absorbed completely.
